Our special bowl of November turns blue with the blue crab of the MediterraneanWe chose it because when we tasted it, we were overwhelmed by a wave of freshness and flavour. And we immediately thought that we had to give a touch of colour to a grey November. colour. And this is perhaps the most colourful bowl we have ever put together!
But let's get back to our crab. Its name, blue, already suggests a rather unusual colouring for a crab, which, in everyone's imagination, is red. Royal Then he tells us that it is majestic and valuable, and in fact it can measure up to 15 cm in length and 23 cm in width, and is difficult to catch! We imagined it sailing the seas with a beautiful blue mantle and claws giants.
And it really is a travelling crab! It originates from the American coast, but has recently arrived on our shores (initially causing panic among our fishermen!). The one we have chosen, in particular, is certified as having been caught in the Mediterranean Sea using the ancient technique of trap fishing. What more could you want? A delicious pulp, soft, fragrant that really seems to capture the flavour of the sea. While crab meat was commonly used in starters and first courses laden with cream and butter in the 1980s, in our special November bowl you can finally discover how it tastes in its natural state!
